Healthy version of rice with the richness of coconut milk
Ingredients
Coconut 1
Rice 200 gm
Onions 2
green chillies 7
Ginger garlic paste 1tbsp
salt per taste
garam masala powder 2tbsp
whole garam masala ingredients
Green cardamom 2
anise flower 2
Cinammon stick 2 inch
bay leaves 2
cloves 4
oil and ghee
Procedure
1. cut coconut into small pieces
2.soak rice for about half an hour
3. add coconut pieces in blender and blend into smooth paste in order to extract milk
4. sieve the milk and leave the dry residue ..we dont needs this
5.now place a biryani pot..Add 2tbsp of oil and 2tbsp of ghee
6.Add whole garam masala ingredients listed under ingredients
7.fry them for 2min
8.Add sliced onions and green chillies
8.saute them for about 5 min and add salt and garam masala powder
9.when the onions turned brown add ginger garlic paste and mix well
10.Add coconut milk ..I have taken 2 cups of rice so 3cups of coconut milk is required
11.Cook on the high flame for 5 min with lid on
12.the milk will be in boiling stage and thicken up a little
13.add soaked rice and mix everything
14.close the lid and Cook on the high flame for 5min with lid on
15.take out mix the rice will be half boiled.
16.now again close the lid and cook for 7min in low flame
17.checkout after 7 to 10 min the grains are separated
18.Tada your coconut rice is ready to serve with your family and friends
