Ras Malai

This is my favorite dessert..and today a easy version of Ras Malaai using Ricotta cheese

Ingredients:

#For Ras

Ricotta cheese 150gm
sugar 2tbsp
muffin/silicone moulds 
Hot water

#For Malai

Milk 2cups
sugar 2tbsp
saffron 1/2tbsp
badam shavings/pistachios 2tbsp

Procedure:

1. In a bowl add ricotta cheese and sugar ..mix well
2. take muffin moulds / silicone moulds and add the Ricotta and Sugar mixture in the cups until half
3. In a oven proof tray add hot water and place these moulds (This step is optional..but by following this the ras wont turn brown)
4. Bake these beauties @240c for 40min (check after 35min)( If you want to use stove use steamer..steam them for 25 to 30min)
5. Meanwhile prepare malaii
6. Add 2cups of milk and keep stirring until they were thick and reduced to 1cup
7. Add 2tbsp of sugar( you can add even more according to your sweetness)
8. You can add some double cream to thicken the milk( Optional i didnt used it)
9. Add some almond shavings
10. Switch off the stove and let this cool
11. check while the ras was done or not
12. Insert a knife and if it comes out clean ..ur ras is ready
13. Let them cool
14. Add all the ras in the malai 
15. Top it up with almond shavings/ Pistachios and saffron
16. Ta-Da Ras Malai is ready to serve ( Serve chilled)

I didnt tried this with regular paneer but will try soon and post..ricotta now a days easily available in big super markets
